A gorgeously perfumed nose is airy, cool and elegant with vivid aromas of dried citrus peel, acacia blossom, oyster shell and tidal pool hints. The remarkably approachable medium-bodied flavors are ultra-fine, indeed they evidence a silky mouth feel on the harmonious and beautifully persistent bone dry finish. I suspect that this impeccably well-balanced and very understated effort will tighten up considerably once it is bottled and as such I have assigned a longer initial drinking window than my description might suggest. This is so silky that the La Forest is almost brutal by comparison. - BH

Dauvissat's 2011 Chablis Preuses is a big step up from the 1er Crus. Preuses signatures are all over this utterly impeccable, gracious Chablis. Layers of cool, saline-infused mineral nuance give the 2011 much of its freshness and verve. Sweet floral notes meld into pears and white stone fruits in an impeccable wine that will offer years of rewarding drinking. (AG) - VM

Iris perfume and saline-sweet savor of raw scallop rise from the glass of Dauvissat 2011 Chablis Preuses, whence they join with luscious fresh lime and white peach on a subtly creamy yet refreshing, buoyant palate. Hints of chalk and fresh ginger add to the stimulation of a prodigious finish. This beauty should be worth following through at least 2020. (DS) - WA

The 2011 Dauvissat les Preuses is a stunning wine in the making, soaring from the glass in a complex and refined mélange of lemon zest, green apple, tart orange, oyster shell, white flowers, paraffin and vanillin oak. On the palate the wine is deep, full-bodied, pure and supremely elegant, with a rock solid core of fruit, crisp, vibrant acids and outstanding length and grip on the complex and seamless finish.
